About the lesson

Hi my name is Giovanni, I'm 32 years old and I am a freelance and private chef.
I started my career in Italy when and 7 years ago I came to London to make new working and life experiences and immerse myself in one of the best professional hospitality scene in the world.
I currently work not only as private chef, but also as a freelance with Levy UK, one of the best catering firm not only in the Great Britain & worldwide.
I also worked for Michelin star and fine dining restaurants and four temporary luxury chef agencies, working for luxury 5 stars hotels and massive venues like Wembley, Stamford Bridge, Tottenham Hotspur Stadium, Royal Ascot, Emirates stadium, the Hilton hotel, Berkeley hotel, The Shangri-La hotel @ The Shard and many more.
I have also been head chef of a 2 year in a row best wine bar in Clapham.
My experience focus on modern European food, Italian (as a native I can teach you the authentic traditional cuisine of my beautiful country), Mediterranean and North European mostly with influences from modern fusion food culture.

About Giovanni

During my career I gained experience not only in fine dining and Michelin starred restaurants, but also in luxury 5 stars hotels and massive busy venues like Wembley stadium, Stamford bridge, The Emirates Stadium, Tottenham Hotspur Stadium, Royal Ascot, The Kia Oval stadium, the Hilton hotel, Berkeley hotel, The Shangri-La hotel @ The Shard, Sheraton Park Lane hotel, The Trafalgar hotel, The Connaught hotel and many more

I also had the chance to jump in the private sector where I gained experience not only in organising private events, dinners, fine dining cooking demonstrations, birthdays and private parties but also many cooking lessons and preparation of daily meals for private households.
I am specialised in modern European, Italian, Mediterranean and North European cuisine but my knowledge includes influences from the Asian and South American one.
I also have experience in pastry.

    When did you start practicing? How did this passion find you?

    I started practicing when I was 12 as a home cook and when I grew up I decided to jump in the professional cooking industry. After many years of experience I realised that I wanted to bring the knowledge I gained in professional kitchen to people's home, and also that a lot of people are interested in evolve and upgrade their cooking skills.
    From the very first cooking lesson I could feel that was something I was really enjoying and the passion for my job was fusing with the one for teaching.

    Which artists or works affect you the most?

    I have always been inspired by Michelin star and fine dining chefs and that is why during my career I decided to join that particular section of the industry.

    What are the qualities and skill required to succeed in this area?

    Obviously you need to have a lot passion for what you do, than you have to be polite, reliable, you always have to think about the health and safety duties and also have a good knowledge of the subject you are teaching.

    What is the most valuable advice you can give to help someone stay focused on creative projects?

    You have to be confident, believe in yourself and you have to create your own professional identity and teaching style.

    How would you describe your passion; how does it make you feel?

    My passion for cooking probably started when I was kid and I was assisting my mother and grandmother in the kitchen.
    I believe that cooking is much more than just preparing something to eat: the smells, the colours and the freshness of the ingredients, the aromas and taste of the final dish all become different parts of a unique experience. That experience is than brought to its highest form in fine dining restaurants and my goal as a cooking teacher is to bring that type of experience from a professional kitchen to home and train the home cooks to be able to achieve it.

    What creative achievements are you particularly proud of?

    I am proud of the whole experience I created during my group cooking lessons in which my students were not only looking at what I was doing but they were completely involved in making the dishes from scratch.
    They were assigned to different tasks and I was supervising their work.
    The students were able to end up with the desired results and they worked like they were in a professional kitchen.
    While doing that they also learned useful cooking skills.

    Have you ever been surprised by a student; by their ability or quick progression?

    Yes I have been impressed from one in particularly: she really impressed me with her quick learning and putting in practice what I was teaching.
    She also had a natural talent when it was the time to plate the dishes.

    I guess the secret is a mix of different qualities such as the passion and professionality for what you do and teach, the reliability, the kindness and politeness towards your students and also the confidence in your own skill
