I need to know the level of my student, I start with evaluating their level then find which kind of lexicon they want to know or the area they need to improve the most on. I get my students to set specific (and achievable) targets to themselves and then work from there with as much fun as possible, I can't stress that enough, if we don't enjoy learning we don't progress as much.
I think that the most important thing about teaching is that students feel comfortable enough to learn at their own pace and then improve efficiently. Learning a new language can be impressive and stressful but I would really love to show students how fun it can be if we approach the learning differently.
