Good teaching, I believe, should be planned, well structured, use a variety of methods such as practical work, while remaining flexible and student focussed.
If a particular section of a teaching session is working well for the student, and the student is enjoying and benefiting from the section, then a good teacher will have the skill to adapt their plan. The teacher also needs to have a variety of teaching tools and plans in mind as some students prefer to follow a clear plan - it really does come down to the learners style in any case . I have worked in IT for over twenty five years, in universities, schools and colleges and for a country council.
