That's why signature bakes usually feature tried-and-tested recipes we are already familiar with, whether cakes, bread, biscuits, or even pies.

First, we'll look at two iconic cake recipes, Victoria sponge cake and carrot cake — both inspired by signature challenges in GBBO episodes.

What is proofing time?

This is the period where dough is left to rest and rise before baking. This step is essential when baking bread so that the yeast (or natural bacteria in sourdough) will produce sufficient gas to make the bread bigger and tastier in terms of texture and flavour, as well as lighter and airier. This is especially true for sourdough because fermentation is slower and relies on wild yeast and bacteria. 3

Here are the ingredients:

  • 500g strong bread flour
  • 350ml lukewarm water
  • 100g active sourdough starter
  • 10g salt
  • Extra flour or rice flour for dusting

Let's look at the steps and instructions to make a sourdough loaf:
