Radiation involves the production and absorption of energy in electromagnetic waves. When the energy is absorbed by atoms or molecules, on the surface of food from the energy source (e.g. the heat and light from gas) , the energy of their motion increases, so does the temperature of the surface. When you hit something by radiation it requires that the food absorbs some of the energy given off by the heat source.
