A typical experiment in science is to set up a situation and then deliberately change one thing in the system, to see what effect it has. The things you change and whatever else changes as a result are called variables. The thing you change deliberately is called the independent variable and the thing that changes as a result is called the dependent variable. After the experiment you'll have a chart with all the values that these variables have taken. It is good practice then to draw a graph, the independent variables along the x-axis and the dependent variables on the y-axis.
