Hello, my name is Sydney. I moved to London from New York City in 2007. Since then, I have taught classic New York Bagel making techniques. I have taught very seasoned/highly trained artisan bakers as well as those who are brand new to baking. My teaching method is for you to do each step alongside me via Zoom or Skype. Prior to the 2 part lesson, I would post the ingredients that are required. The equipment required is likely already in your kitchen, however we would confirm this prior to beginning.
I introduced the New York Bagel to London when I operated a Bagel Wholesale Business - however, it began as a retail bagel business. We produced classic New York Bagels which means we fermented for a minimum of 24 hours before shaping, proving/proofing, boiling, seeding and baking. We also produced Holiday themed bagels ie., Halloween, Christmas, Easter, Rainbow and other specialty bagels such as Black Squid Bagels, Beetroot Bagels and Mini Bagels. Before selling the business we supplied Whole Foods Market, Trumans, Heathrow Airport, and numerous other businesses in and around London. If you have ever been to New York City, you know there are not many things to compare to a classic artisan bagel!! And I can teach you how to create like a true New Yorker! And if there is time, I can teach you what all the best fillings are! Separately, I can also provide lessons on how to become a barista with serious skills which is very different from what is practiced in chains. But that would likely be a separate lesson given the time restraints. But what's better than a proper NY Bagel and a coffee?!!! Not many things!
