I usually stick to easy or relevant metaphors when explaining anything scientific in a way I know they can understand. I can even use simple diagrams and examples if the subject is more complex. As for literature, I use certain examples to highlight the key differences between correct or incorrect writing, as well as help them understand reading between the lines and keeping up with what they read. My level of tutoring can vary from 7th-11th grade, I've always enjoyed teaching others when it comes to science and literature as they are my favorite subjects.
