About Irina
I’m a professional pastry chef and chocolatier with over 15 years of experience. During this time, I’ve built my own pastry production business and gained extensive hands-on experience using professional techniques.
I work with yeast and laminated dough, pies, pastries, modern desserts, and chocolate. I make filled chocolate bonbons, cut chocolates with different fillings, handcrafted chocolate bars, and chocolate-covered berries.
In my classes, I don’t just share recipes. I explain how each technique works, how to use ingredients correctly, achieve the right textures, combine flavors, and avoid common mistakes.
My lessons are hands-on. We choose what to make based on your interests and experience, prepare it together, and go through every step of the process.
In my classes, you’ll learn how to bake pastries and desserts, work with chocolate, make filled chocolates, and create your own sweet treats. If you’re already a pastry chef, you can learn new techniques, discover new recipes, and expand your product range.

During each lesson, we’ll prepare your chosen recipe step by step, learn essential techniques, and work through common mistakes. You’ll leave with a tested recipe, practical skills, and the confidence to recreate it on your own.
You can choose a single workshop or a series of lessons. Each class is tailored to your interests and experience level.
