About John
We are a private culinary firm specializing in lessons and small scale, hyper focused catering work.
Over fifteen years upscale culinary arts experience, with specialization in French, Creole, American Southern, Italian, and fusion cuisines.
Unique mix of culinary, management, and education background. Culinary Arts Degree, minor in pastry, MBA in management. So not only do I teach the correct way according to chefs, all my techniques and tricks are tuned to be efficient, trainable quickly, and financially sensible - whether it's dinner for two or two hundred.
I enjoy creating with my hands, feeding people, providing nourishment - and teaching others how to do it, too. There is a deep and soulful satisfaction that comes with that.

Almost all conversations begin with "What do you most want to accomplish?" And it becomes more granular from there.
Almost all one on one classes are tailored to the individual, and I do my best to showcase versatility and value. So, if you wanted to learn to make creme brulee, I would teach you that, but also leave you with a recipe for quiche, and creme tarts. Master the egg, you master them all.

Have cooked with John and eaten his food. Can't not recommend the taco picnic at the top of the Vulcan. Try not to eat him, he's yummy.
My wine lesson from several years ago is still proving very useful in my work. After years of honestly believing people were making it up when they said things like "buttery" or "grassy" in reference to a wine's taste, I can now actually answer guest questions and even make recommendations for pairings.
