About Thomas

Pastry chef for almost 25 years, I have been able to explore almost all the facets of this fascinating field of pastry.
For me, pastry is a real Art, whether visually with a perfect finish, technically, or the blending of flavors.

I like to transmit my passion, the love of quality ingredients and a job well done.
But sometimes I just want to feel the pleasure of working with a living material, to feel a biscuit sing under the palette, to observe the crystallization of chocolate, the cooking of a fruit paste, or just to smell the smell of a pie. out of the oven. Pastry is also sometimes simply an awakening of the senses or a return to childhood.
It's all these exciting facets of my job that I like to pass on to my students.

Il saura vous guider et vous accompagner vers les sommets, sans vous prendre la tête, et vous serez surpris de progresser si rapidement.
Vous découvrirez, aussi bien la tarte aux pommes revisitée , magnifique , que le Paris Brest, sublime, ou le Fraisier, à tomber à la renverse, et tout ça fait par Vous , oui par vous !!!
