I structure my lessons around the needs of the students. Some students prefer to be lectured to, while others prefer to be given activities and engaging tasks.

I usually like to know the background of the tutee - what topics they find easy or which they understand very well, and what topics they find very difficult. Then I tailor my lessons to fit in such that I spend more time on those areas which they find difficult.
